Ingredients:
2 ripe bananas, mashed (approx. 160g)
4 medjool dates
1 ½ cups milk of choice (375ml)
2 cups Made Monday Signature Vanilla Creme or Honey & Cinnamon Overnight Oats (200g)
1/3 cup plain flour or vegan protein powder
1 tsp baking powder
Pinch of salt
Sauce:
3 tbsp runny almond or peanut butter
3 tbsp maple syrup
Splash of milk, to thin
Method:
1. Preheat the oven to 180°C.
2. Remove the pits from the dates, place in a bowl and cover with ¼ cup boiling water. Allow them to soften for a few minutes, then mash with a fork to form a paste.
3. Mash the bananas directly into an oven safe baking dish. Add date paste, Made Monday, milk, flour, baking powder and salt, mix until well combined.
4. Bake at for 35–40 minutes until lightly golden and set. Allow to cool slightly.
5. Meanwhile, mix the sauce ingredients together in a bowl until smooth then pour sauce over the baked oats.
6. Divide into 4 portions, optional to serve with a dollop of yoghurt.
Serves 4.
Store in fridge or freezer. To reheat, microwave individual portions for 1 minute (or as needed).
