Base
½ cup Made Monday Signature Vanilla Crème Overnight Oats (50g)
½ cup milk of choice (125ml)
¼ cup yoghurt (60g)
½ tbsp peanut butter + extra for topping
¼ cup berry jam/compote (recipe below)
Jam (makes 1 cup):
1 cup berries (250g)
1 tbsp chia seeds (15g)
1-2 tbsp granulated sweetener, to taste
1 tsp lemon juice
Method:
- Add the milk and peanut butter to a bowl or container, whisk until smooth. Add the Made Monday Overnights Oats and yoghurt, mix to combine. Place in the fridge for 10 minutes or until thickened.
- For the jam, add the berries, sweetener and lemon juice to a saucepan or microwave safe bowl and heat until softened. Roughly mash with a fork then stir in the chia seeds and set aside to cool and thicken slightly (the jam will continue to thicken in the fridge).
- Add a layer of jam over the oat mixture then top with the peanut butter (optional to split the toppings into two layers). Place in the fridge for 2 hours or overnight to set.
- Optional to top with extra berries, jam or peanut butter to serve.
Store leftover jam in the fridge for up to a week.
