PB & J Overnight Oats - Made Monday

PB & J Overnight Oats

Base
½ cup Made Monday Signature Vanilla Crème Overnight Oats (50g)
½ cup milk of choice (125ml)
¼ cup yoghurt (60g)
½ tbsp peanut butter + extra for topping
¼ cup berry jam/compote (recipe below)

Jam (makes 1 cup):
1 cup berries (250g)
1 tbsp chia seeds (15g)
1-2 tbsp granulated sweetener, to taste
1 tsp lemon juice

Method:

  1. Add the milk and peanut butter to a bowl or container, whisk until smooth. Add the Made Monday Overnights Oats and yoghurt, mix to combine. Place in the fridge for 10 minutes or until thickened.
  2. For the jam, add the berries, sweetener and lemon juice to a saucepan or microwave safe bowl and heat until softened. Roughly mash with a fork then stir in the chia seeds and set aside to cool and thicken slightly (the jam will continue to thicken in the fridge).
  3. Add a layer of jam over the oat mixture then top with the peanut butter (optional to split the toppings into two layers). Place in the fridge for 2 hours or overnight to set.
  4. Optional to top with extra berries, jam or peanut butter to serve.
Store leftover jam in the fridge for up to a week.
