Ingredients:
1 cup dates
1/2 cup Made Monday Chocolate Therapy Overnight Oats (50g)
3 tbsp maple syrup (45g)
3 tbsp almond or peanut butter (60g)
Pinch of salt
2-3 tbsp soy/protein crisps
100g chocolate
Method:
- Add all the ingredients except soy crisps and chocolate to a blender or food processor and blitz until smooth (mixture will resemble a sticky dough).
- Roll the mixture into 10 balls and place onto a lined plate to prevent them from sticking. Refrigerate for 30 minutes to firm up.
- Heat the chocolate in a microwave safe bowl in 30 second increments until melted. Add the soy crisps and mix well.
- Place each ball into the chocolate mixture until evenly coated. Refrigerate for another 30 minutes until chocolate has set.
