Healthy Snickers Bars

Decadent Homemade Snickers Bars by @adatewithsam 🍫🥜🥰 Packed with nutrients and ridiculously yummy! Save this one for your next sweet treat craving ✨

Base:
1 ½ cups Made Monday Chocolate Therapy Overnight Oats
2 tbsp cacao powder
¼ cup almond meal
3 tbsp maple syrup
3 tbsp melted coconut oil
1 tbsp almond or peanut butter
1 tbsp almond milk

Caramel:
1 ½ cups Medjool dates
¼ cup runny natural peanut butter
¼ cup canned coconut cream 
¼ tsp salt
1 tsp vanilla

Coating:
⅓ cup roasted peanuts
350g chocolate

Method:
1. Soak the dates in a bowl of hot water for 10 minutes to soften. 
2. For the base, blend Made Monday overnight oats until it forms a coarse flour, then add remaining ingredients and blend until it resembles a soft dough. 
3. Line an 8x4 loaf pan with parchment paper and press the dough into the base.
4. For the caramel, blend all the ingredients in a food processor until smooth and spreadable. Add a splash of milk if needed. Once combined, spread the caramel over the base, the press the peanuts on top so they stick. Refrigerate to set then slice into 10-12 bars.
5. Melt the chocolate in a bowl in 30-second intervals in the microwave. Once melted, dip the snickers bars into the bowl with a fork and coat using a spoon, then transfer onto a sheet of baking paper.
6. Freeze for 30 minutes for the chocolate to set. Stored in the fridge or freezer. 

Serves: 8-10 bars
