Biscoff Protein Truffles


Ingredients:

¾ cup Made Monday Vanilla Crème Overnight Oats (80g)
½ cup almond meal (50g)
⅓ cup protein powder or extra almond meal (40g)
¼ cup melted Biscoff (60g)
⅓ cup light coconut milk (80g)
2-3 tbsp honey or maple/rice malt syrup (30g)
2 tbsp desiccated coconut, for rolling (15g)

Method:

  1. Add melted Biscoff, coconut milk, and honey to a bowl. Mix until smooth (if it gets too thick, microwave for 20 seconds).
  2. Stir through Made Monday oats, almond meal, and protein powder until well combined.
  3. Roll into 12 balls, toss in coconut, and set in the fridge.
  4. Store in an airtight container for up to 2 weeks. Enjoy!
