Ingredients:
2 ripe bananas, mashed (approx. 160g)
1 ½ cups milk of choice (375ml)
2 cups Made Monday Signature Cookie Butter Overnight Oats (200g)
1/3 cup plain flour or vegan protein powder
1 tsp baking powder
1 1/4 cups Greek yoghurt
Caramel:
3 tbsp runny almond or peanut butter
3 tbsp maple syrup
1/4 cup milk, to thin
Method:
1. Preheat the oven to 180°C.
2. Mash the bananas directly into an oven safe baking dish. Add Made Monday, milk, flour and baking powder, mix until well combined.
3. Bake at for 35–40 minutes until lightly golden and set. Allow to cool slightly.
4. Mix the caramel ingredients together in a bowl until smooth. Spread the yoghurt over the oats, then add dollops of the caramel and swirl through with a knife.
6. Divide into 4 portions, optional to serve cold or warm.
Serves 4.
Store in fridge or freezer. To reheat, microwave individual portions for 1 minute (or as needed).
