Anzac Biscuits

Ingredients:
1 1/2 cup Made Monday Honey & Cinnamon or Vanilla Creme Overnight Oats
1/4 cup coconut
2-3 tbsp golden syrup or honey
60g butter
1/2 tbsp water
1/4 tsp bi carb soda

Method:
1. Preheat the oven to 170°C and line a baking tray.
2. Combine Made Monday and coconut in a large bowl, set aside.
3. Melt the butter in a saucepan over medium heat. Mix in the golden syrup and water, then stir in the bicarb soda (mixture will become foamy).
4. Pour the syrup in with the oats and mix until well combined.
5. Shape into 6-8 cookies and place on the baking tray.
6. Bake for 12-15 minutes until lightly golden. Allow to cool completely so they firm up.

Makes 6-8 cookies.
